Hot Salmon-Potato Cakes Recipe

Your kids will love this meal. There is nothing like an hot and ready grilled salmon recipe that is quick and easy to make. Did you know it only takes 20 minutes to cook and prepare this wonderful meal? Also the recipe has an easy four step plan to follow.

Let’s look at the list of ingredients.

  • You will need 14 ounces skinless salmon fillets or one 14.75-ounce can salmon, remove the skin and bones to the chicken as well.
  • 2 cups refrigerated sour cream and chive mashed potatoes.
  • 1/2 cup seasoned fine dry breadcrumbs.
  • Tablespoons snipped fresh dill.
  • Use a non stick cooking spray.
  • 1. 5-ounce package mixed salad greens.
  • 1/2 cup bottled honey Dijon salad dressing.

As you can see the mixture of fresh greens and healthy chicken, helps with cutting the calories down, and raises the vitamin intake for nutrition. My favorite to use is the sour-cream and chives, because gives it a tangy favor. And the Dijon salad dressing has a kick-butt taste that will make you ask for more.

You can use this for lunch and dinner, because the dipping of the salad dressing and crispy-tender grilled salmon allows you to bring your meal with you where ever you may go.

Let’s look at how to prepare  a salmon-potato cakes.

1. Start by  rinsing the salmon off with cold water, then pat them dry dry gently with a paper towel. Now place the salmon into the 2 quart baking dish, and cover it a vented plastic wrap. microwave on high for about 2 1/2 to 3 1/2 minutes or until the fish is flake when tested with a fork . bread fish into pieces with a fork.

2. Use a large bowl to combine the fish and, mashed potatoes, breadcrumbs, and dill.  Now the fun part, shape your fish into 8  3 1/2-inch cakes.

3. Lightly coat the  large  nonstick  skillet with cooking spray. Cook cakes  over medium-high heat  for 3 to 4 minutes on each side or until heated though and brown.  If necessary, reshape the cakes to your liking using a spatula after turning.

4. Finally, divide the salad  green among four plates & top the greens with the fish cakes. Serve it with salad dressing.
